Zara is not a chef.

She will tell you that herself. She’s a food scientist, and there’s a difference. Chefs work with flavor. Scientists work with formulas. They start with a question: which flour gives me the texture I need? Which sugar affects the protein structure? Which gum will hold everything together when there’s no egg?

Zara spent 15 years asking those questions in corporate food labs. Then one day she started asking them for herself. Like many of us, she was a mom and as she was looking for healthier options that fit into her busy life.

The result is Beloved Foods: a line of high-protein, high-fiber cake mixes designed so that any woman, at any point in her day, can make herself something that tastes indulgent and actually nourishes her body. All you need is water and a microwave and sixty seconds.

Friends, we made one during Zara’s shoot at my Barrington studio. To be honest, I was not expecting much. But after a minute in the microwave the kitchen smelled like chocolate cake and we were hooked. I ordered a case for our home. Then a case for my best friend. Then cases for a few more mom friends who I wanted to surprise with a pick-me-up.

They’re good you guys. Not quite as sweet as your standard cake, but if you’re like us that’s a bonus. They’re comforting, delicious, and packed with protein and fiber. Win win win.

That’s the product. And behind it is a woman who built it completely on her own.

From the Lab to the Farmers Market: How Beloved Foods Got Built

Before Beloved Foods existed, Zara went through every step that most people never see. She started at the bench. Weighing ingredients. Running small-batch tests. Adjusting the flavor, the gum content, the sugar level, then testing again. Going back. Fixing it. Testing again.

Then she took it to real people. Farmers markets, where the feedback is instant and honest. She watched women try her cakes and listened to what they said. She brought that back to the formula. Then she moved the production to a commercial kitchen, then to a manufacturing plant.

She also learned to pitch. Preparing presentations. Bringing samples. Standing in front of people who had questions she didn’t always have answers to yet, and figuring it out anyway.

She did all of this while being a mom. She immigrated here from India. She built her science career. And then she decided that wasn’t enough, and she built something of her own.

The Product: Nutritious, Indulgent, and 60 Seconds

When I asked Zara what made her build this, she talked about being a mom who wanted options. Not a protein bar that tastes like chalk. Not a diet food with a sad name. Something genuinely nutritious that also felt like a treat.

The intersection of nutritious and indulgent is actually very hard to pull off scientifically. Most products choose one and gesture vaguely at the other. Zara knew enough food science to know it didn’t have to be that way, and she was willing to do the work to prove it.

Beloved Foods cake mixes come in flavors like Chocolate Serenity, Lemon Berry Bliss, and Cinna Choco Comfort. Each cup has 15g of protein, 7-8g of fiber, and 21 vitamins and minerals. You add water. You microwave it. That’s the whole process.

She also talked about wanting to create something she was proud of. To quit the corporate role and build something that meant something, specifically for women who deserved a moment of real indulgence without the guilt.

Why She Needed Brand Photography in Chicago

When Zara came to Ann & Kam Photography, she had plenty of photos of her product. Beautiful ones. But none of herself as the person who created it.

Grant applications, her website, social media, press, loan applications: all of them ask you to show up as a real person. As a founder. And she had nothing to work with.

She worked with a stylist I recommended who helped her pull looks from her own closet. We shot her in a navy suit for clean CEO headshots. A hot pink sweater under an apron for the kitchen scenes. A warm brown jacket for approachable lifestyle shots. A pink blazer with jeans for the product tower moment that I think is going to stop people mid-scroll. A white suit for the power shot.

She came in as a food scientist who happened to also be the founder of a food company. She left with images that show both.

The scientist: precise, knowledgeable, the person who actually developed this formula. The founder: warm, bold, completely real, holding a stack of her own product and laughing because she built this thing and it works.
